Pumpkin Muffins

Ingredients:

  • 4 eggs (1 whole, 3 whites)
  • 1 ¼ cups sugar
  • 1 cup corn oil
  • 1 ¾ cups pumpkin (16 ounce can)
  • 2 cups whole wheat flour
  • 1 cup white flour
  • 1 tablespoon cinnamon
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup mini chocolate chips (raisins or dates)

 

Preheat oven to 375 degrees.

Beat eggs slightly.

Add sugar, oil and pumpkin. Beat thoroughly.

Add dry ingredients and mix until smooth. Stir in chips (or raisins or dates).

Fill greased or paper filled muffin tins 2/3 full.

Bake for 15-20 minutes.

(Mini muffins make a perfect bite size treat. Reduce baking time to 10-15 minutes).

Sprinkle tops with brown sugar.
